Salmon Bibimbap

This scrumptious version of bibimbap uses ingredients that can be found at any major grocery store and is still packed with flavor, while also healthy and fresh. Try this recipe with KPOP Sauce, the chili sauce with attitude and taste the party.

Traditional Korean bibimbap calls for a number of fresh ingredients, a lot of which can only be found at Korean specialty grocery stores. This version uses ingredients that can be found at any major grocery store and is still packed with flavor, while also healthy and fresh. The best part about this dish is that you can substitute a number of different vegetables in and out. Give bell peppers, zucchini, or green beans a try and see how it comes out. Our recipe is just a starting point. Enjoy!

Ingredients

  • 1/2 pre-cooked salmon fillet
  • 1/2 cup of kale
  • 1/2 cup of mushroom of choice
  • 1/2 cup of carrots - shredded
  • 1/2 small cucumber - diced
  • 1/4 white onion
  • 1/4 cup of edamame
  • 1 cup of cooked brown rice (feel free to substitute with shredded lettuce or soba noodles)
  • 1 egg
  • 3 scallions, thinly sliced
  • 1/2 cup of Japanese bread crumbs (Panko)
  • 1 large egg
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 2 tablespoons of KPOP Sauce (add more for additional flavor and heat)

Directions

  1. Begin by sautéing the kale, mushrooms, carrots, and onion in a pan using a little bit of olive oil. Note that the kale and onions take the longest to sauté so easiest to start with them.
  2. Once the kale, mushrooms, carrots and onion are done, begin cooking a fried egg, preferably sunny side up. You want the yolk to be runny and not over cooked.
  3. In a bowl, place the brown rice in the center. Begin adding the sautéed vegetables, the edamame, the diced cucumber, the KPOP Salmon fillet, and the egg.
  4. Mix all of the ingredients up in the bowl, add some more KPOP Sauce for flavor and then enjoy!!!
