Whenever we go out to Koreatown for a night of delicious KBBQ, endless soju, and bad karaoke, there is never a wrong time for a heaping order of rich and creamy corn cheese. This is a popular appetizer in Korean cuisine that is best enjoyed with good friends and an ice-cold beer! It's definitely my favorite Korean side-dish of all time, because it's so ridiculously simple and so ridiculously delicious.
Inspired by our love for this classic comfort food and National Cheese Day (I know), we put our own spin on this cheesy classic by upgrading the usual mayonnaise from plain to popping with our KPOP Kimchi Mayo Sauce, and then topping it all off with our super spicy KPOP XXX Gochujang Sauce for that much needed kick. The savory, buttery cheese melted into the tangy base of sweet corn and kimchi mayo will make this dish a favorite at any table.
KPOP Kimchi Mayo sauce is the subtle ingredient in this recipe that perfectly balances out the sweet corn and the hot sauce, cutting through with some much needed tang. The KPOP XXX Sauce is really just the gochujang-flavored cherry on top, at least for those that can take the heat! It adds an extra level of spice to the dish that perfectly completes the symphony of flavors. It's so good, one bite will make you close your eyes and savor the best KPOP Foods has to offer.
Gochujang Corn Cheese
(makes 2-3 servings)
- 2 slices of cheddar cheese
- 15 oz. of fresh corn
- 2 tbsp sugar
- 2 tbsp KPOP Kimchi Mayo Sauce
- Top with KPOP XXX Sauce to preference
- Pinch of salt and pepper
- Drain can of corn thoroughly
- Pour corn into mixing bowl
- Add 2 tbsp sugar, 2 tbsp Kimchi Mayo, and a pinch of salt and pepper
- Mix well
- Add 2 slices of cheddar cheese
- Place bowl into baking pan and bake at 425 for 15 minutes
- Add XXX Sauce for extra spice
- Mix again, and feast!
