Korean Food Essential: Kimchi

Ingredients

  • 2 lb Napa Cabbage
  • 1/2 Cup of Sea Salt
  • 5 Cups of Water
  • 4-5 garlic cloves, minced
  • 1/2 onion, diced
  • 2 Teaspoons Sugar
  • 2 Tablespoons of Apple Juice
  • 1 Teaspoon of Honey
  • 2 Jalapeno or Preferred Chili Pepper, sliced
  • 1.5 Cups of KPOP Sauce

Directions

  1. Cut the stem part of the cabbage and then cut each cabbage leaf into quarter pieces, vertically. Place the cabbage into a large mixing bowl
  2. Combine the sea salt and water into a pot and bring it to a boil so that the salt fully dissolves. Let the water cool for 5 minutes and then pour over the cabbage. Let sit for 10 minutes and then turn the cabbage pieces over to the other side and allow to sit for another 5 minutes. Afterwards, rinse the cabbage and drain thoroughly.
  3. Begin making the kimchi sauce by combining the garlic, onion, apple juice, honey, sugar, chopped jalapenos, and KPOP Sauce into a blender. Begin to blend until the puree becomes smooth.
  4. Place the drained cabbage into a large mixing bowl and then add the kimchi filling on top. Toss everything together to evenly coat each piece of cabbage. When serving, sprinkle on some sesame seeds.
