KPOPPED Cranberry Glazed Meatballs (6 servings, 24 meatballs)

Ingredients

Meatball Ingredients

  • 1 lb of lean ground beef
  • 2 cloves of garlic, minced
  • 3 scallions, thinly sliced
  • 1/2 cup of Japanese bread crumbs (Panko)
  • 1 large egg
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 3 tablespoons of KPOP Sauce

Ingredients for KPOPPED Cranberry Glaze

  • 2/3 cup of cranberry sauce
  • 3 tablespoons of rice vinegar
  • 2 tablespoons of soy sauce
  • 2-4 tablespoons of KPOP Sauce, depending on desired level of heat

Directions

  1. Combine all of the meatball ingredients in a large bowl and mix well. Then begin shaping the meatballs using your hands and place onto a plate. Try to make the meatballs the size of a golfball.
  2. Preheat oven to 350°F. While oven is heating, begin to brown the meatballs on all sides by heating a little oil in a large skillet on medium-high heat. As meatballs begin browning on all sides, transfer them over to a large baking tray lined with either aluminum foil or parchment paper. The recommendation is to brown the meatballs in batches of 8-10.
  3. Place tray of meatballs in over for approximately 10 minutes, or until cooked to desired liking. If you have a meat thermometer, try to get the meatballs to an internal temperature of 160°F.
  4. While meatballs are in the oven, begin preparing the KPOPPED Cranberry Glaze. Place all of the glaze ingredients into a sauce pot and place over medium heat. Continue mixing and stirring until sauce begins to thicken and then remove the pot from the heat and set aside.
  5. Once the meatballs are cooked, brush each meatball with the glaze and then place onto the serving plate. As an additional option, you can also garnish the glazed meatballs with sesame seeds and thinly sliced scallions. Enjoy!
